Açaí bowl

Açaí bowl

When it comes to breakfast, I’m all about the eggs.  Runny poached eggs to be precise, served with good crusty bread and whatever else is in the fridge – hummus, avocado, bacon, tomato, baby spinach.  It’s by far the best meal of the day.

On the rare occasion that I go out for breakfast, the muesli and pancakes don’t even get a look in.  But lately I have to say (and never thought I would), that I’ve been feeling a bit unsatisfied with eggs.

So I decided it was time to branch out and find a breakfast alternative.  Mix it up a bit.  What better place to start than that much raved about açaí bowl that seems to have taken Melbourne by storm.  To be honest, I never really saw the appeal of having a smoothie in a bowl for breakfast but at the same time I was curious to find out if so many food loving people could be wrong.

It turns out that they are not wrong… an açaí bowl is the perfect way to start a hot summer’s day.  It’s also super quick and easy to prepare providing you have the frozen fruit ready to go.

Açaí bowl

2 cups frozen strawberries

2 frozen bananas

1/4 cup frozen raspberries

4 tbls açaí powder

1 cup full cream milk

2 tbls peanut butter

For the topping

Fresh berries – I used raspberries and blueberries

Flaked coconut

Flaked almonds

Chia seeds

For the açaí bowl, blend all the ingredients in a food processor until you have a nice smooth, ice-cream like consistency.

Top with granola, berries, nuts etc… the options are endless!

Makes 2 generous serves*

*If you have left over açaí mixture, pop it in the freezer.  It makes delicious ice-cream.  Just take it out of the freezer a few minutes before serving to soften it up.  Give it a blitz in the food processor to get it back to a creamy texture if you like and enjoy! Great one for kids.
