Many years ago, a good friend of mine had us around at her house for lunch. I don’t remember what she served for main course (which is unusual for me), or who was there on the day, but I do remember the dessert. Little glasses layered with fresh seasonal fruit, topped with king island diary cream and mint. There was nothing fancy about it – so simple, but so delicious.
So if you’re looking for a simple but impressive dessert – here you have it.
Summer in a little glass cup
2 mangos, peeled and diced
1 punnet of blackberries
1 punnet of raspberries
1 punnet of blueberries
1 punnet of strawberries, sliced
Good quality vanilla bean ice-cream, thick cream or yoghurt
Handful of mint leaves, picked and finely sliced
Handful of toasted coconut (optional)
Drizzle honey around the inside of each glass and then scatter with the coconut. Layer fruit into the glass, one by one, until all used up. Put a scoop of ice-cream, cream or yoghurt on top and then top with fresh mint (and/or chocolate, nuts etc…).
